Butcher 2 Job at WINNER Butcher, Brooklyn, NY

  • WINNER Butcher
  • Brooklyn, NY

Job Description

WINNER is a Brooklyn-based hospitality group built around great food, excellent coffee and bread, genuine hospitality, and welcoming neighborhood spaces. From our original bakery and butcher shop to WINNER in the Park and our growing collection of restaurants and retail locations—including our newest location at WINNER at Alloy in Downtown Brooklyn—we care deeply about quality, community, and taking care of our guests and our team.

About WINNER Butcher

WINNER Butcher is a neighborhood butcher shop in Brooklyn focused on thoughtful sourcing, whole-animal butchery, and high-quality food prepared with care. We break down whole animals in-house and offer fresh cuts, house-made sausages, prepared foods, and other products directly to our community.

We’re looking for an experienced Butcher II to join our team and help us continue building a thoughtful, high-quality butchery program.

The Role

The Butcher II is a skilled member of our butchery team with strong experience in whole-animal breakdown and meat fabrication. Working closely with the Head Butcher, you’ll help execute daily production, prepare products for our retail case and restaurant partners, and support the development of junior members of the team.

This is a great opportunity for an experienced butcher who takes pride in precision, craftsmanship, efficiency, and thoughtful use of the whole animal and wants to continue developing their skills in a professional, collaborative environment.

You’ll be responsible for:

  • Assisting with whole-animal breakdowns of beef, pork, and lamb
  • Fabricating primal and subprimal cuts accurately and efficiently
  • Preparing fresh cuts for the retail case, special orders, and restaurant service
  • Maintaining high standards for portioning, presentation, and product quality
  • Producing house-made sausages, marinated items, and other value-added products
  • Tracking yields and working thoughtfully to minimize trim and product waste
  • Supporting fresh case setup and maintaining an organized, attractive presentation
  • Maintaining accurate inventory and communicating product needs to the Head Butcher
  • Training and mentoring Butcher I and Apprentice-level team members
  • Sharing knowledge and demonstrating proper butchery techniques
  • Maintaining a clean, organized, and safe work environment
  • Properly cleaning and caring for knives, saws, grinders, and other butchery equipment
  • Following all food safety, sanitation, and workplace safety procedures
  • Providing friendly, knowledgeable service to customers at the retail counter
  • Working collaboratively with the broader WINNER culinary and hospitality teams
We’re Looking For Someone Who Is:
  • Experienced in professional butchery, with a strong background in whole-animal breakdown
  • Highly skilled with knives and comfortable working with beef, pork, and lamb
  • Precise, efficient, and attentive to detail
  • Comfortable working independently while also being a strong team player
  • Interested in continuing to develop their craft and knowledge
  • Able to teach and support less experienced team members
  • Knowledgeable about meat yields, fabrication, inventory, and product presentation
  • Committed to food safety, cleanliness, and proper equipment care
  • Interested in thoughtful sourcing, regional food systems, and making the most of the whole animal
  • Warm, professional, and comfortable interacting with customers

Minimum 3 years of professional butchery experience, including whole-animal breakdown, is preferred.

Physical Requirements

This is a hands-on, physically demanding position. Candidates must be comfortable:

  • Standing and working on their feet for extended periods
  • Repeatedly bending, reaching, lifting, and moving product
  • Safely lifting and carrying 60+ pounds up and down stairs
  • Working in refrigerated and temperature-controlled environments
  • Performing repetitive knife and fabrication work throughout the day
  • Safely operating and cleaning professional butchery equipment

Reasonable accommodations may be available for qualified individuals with disabilities.

Benefits
  • Paid Time Off
  • 401(k)
  • Pre-tax commuter benefits
  • Employee discounts across WINNER Hospitality
  • Opportunities for advancement within the WINNER butchery and culinary teams
Why WINNER?

At WINNER, we care about doing things well—from how we source and prepare our food to how we take care of our guests and one another.

WINNER Butcher offers the opportunity to work with whole animals from start to finish, develop your craft alongside experienced butchers, and be part of a neighborhood shop where the connection between the food, the team, and the customer really matters.

If you’re an experienced butcher who takes pride in your craft and wants to be part of a growing Brooklyn hospitality group, we’d love to meet you.
